The book intends to answer a question: how can a consumer recognize the characteristics and determine the quality and value of extra virgin olive oil? The text develops methodological proposals to acquire an approach to the conscious consumption of EVOO and to appreciate its many peculiarities. With simplicity and rigor, this essay proposes an analysis of the olive grove-mill system which is the basis of the composition of the oil, thus determining its sensorial and nutritional properties.
